Frozen Stained Glass

When Sarah was young she had a favorite frozen treat that I made from a recipe in an old Joys of Jell-o cookbook from the 1960′s. When cut it looked like stained glass so that is what we called it although the original recipe was called Frozen Fruit Salad. The recipe included a package of Jell-o, Cool Whip, mayo, marshmallow, canned pineapple in syrup and a few other ingredients that were certainly not going to work now. I thought about this recipe for quite a while contemplating different ways to make it work with healthy ingredients. Frozen Stained Glass is back on the menu and is as cool and delicious as ever, but now it’s healthy as well.

Ingredients:
You will need 2 loaf pans for this recipe
- 1 cup lite coconut milk
- 1/2 cup raw honey
- 4 tbsp arrowroot powder
- 1 cup Yogurt Cheese or very thick greek yogurt
- 1 tsp vanilla extract
- 1 1/2 cups fresh pineapple, cut into chunks
- 1 cup fresh blueberries
- 1 cup fresh dark sweet cherries, stems removed, pitted and cut in half
- 1 banana, peeled and diced
- 3 pasteurized egg whites (you must use a pasteurized egg product rather than fresh eggs as the eggs will not be cooked)
Preparation:
- Dissolve the arrowroot with the coconut milk and honey in a small saucepan.
- Place the pan over high heat, bring to a boil stirring constantly until thick. Set aside to cool.
- Place the pineapple in a blender and blend into a puree.
- Add the yogurt cheese and vanilla. Blend to combine.
- In a small bowl beat the egg whites until stiff peaks form.
- Pour the pineapple mixture and the cooled coconut milk mixture into a large bowl, mix well and then fold in the eggs whites until combined.
- Fold in the fruit.
- Pour equal amounts into the loaf pans.
- Place in the freezer for 3-4 hours until frozen.
- To serve cut individual slices and place on a serving plate or for a more sensational presentation unmold the whole loaf onto a serving platter and cut into slices.

Store any leftovers in the freezer until ready to eat.








Does the arrowroot serve as a thickener? If so, would xanthan gum be an appropriate substitution?
The arrowroot is used to thicken the coconut milk. I have never used xanthan gum so I don’t know how it would work. We try to use ingredients that are as natural and unprocessed as possible so we usually use arrowroot, corn starch or kuzu root starch. I used arrowroot in this recipe because corn starch and kuzu don’t freeze well. Kristy
