Banana Boats

Like all parents we do all sorts of things to get our children to eat good foods. When Sarah and her brother were young this was one of their favorites, banana boats. They loved squashing the bread with the rolling pin! Sarah’s brother Brian was allergic to nuts so while Sarah liked peanut butter and banana, Brian had honey sweetened cream cheese and banana. I’ve seen these made with tortilla’s and have tried them that way but I like the squashed bread better not only because it’s more fun but it’s softer and doesn’t crack apart like a tortilla does. Set sail and enjoy!

Ingredients:

  • 4 slices whole grain bread of your choice, crusts cut off (softer is better)
  • 4 tbsp peanut butter
  • 1 banana
  • 2 strawberries, sliced into halves
  • 4 large toothpicks
  • wax paper

Preparation:

  1. Lay slices of bread onto a sheet of wax paper. Cover with another sheet. Roll with a rolling pin until squashed and flat.

    Place bread on wax paper, cover with another sheet of wax paper and roll bread flat

  2. Spread 1 tbsp peanut butter over each piece of bread.
  3. Cut the banana in half. Slice one half into 4 pieces lengthwise. Cut the other half into 4 rounds.
  4. Place one piece of the lengthwise cut banana on each piece of  bread and roll up. Secure with a toothpick.
  5. Slide one round piece of banana down the toothpick and then top with one piece of strawberry.
  6. Bon Voyage!

Notes:

For a nut free version, mix 4 tbsp clean neufchatel cheese with 1 tbsp honey or coconut nectar and a sprinkle of cinnamon (optional). Prepare as directed above replacing the cheese for the peanut butter.
